Holiday Stuffings - Will stuff approximately 10 to 12 pound turkey – adjust accordingly.


Sage and Onion Stuffing


2 large onions, peeled

8 ounces fresh bread crumbs
1 ounce suet, chopped
1 teaspoon dried sage
2 eggs, lightly beaten
Salt and pepper

Put onions into a saucepan with 1 cup water, cover and bring to a boil. Lower heat to a simmer and cook for 20 minutes until partially tender. Remove onions from water, cool, and then chop into small pieces. Transfer to a bowl, add the remainder of the ingredients and mix well.
 



Apple and Prune Stuffing

1 pound prunes
3 tart apples, peeled, cored and chopped
1 cup cooked rice
1 stalk celery, chopped
1 tablespoon parsley, chopped
Rind and juice of one small lemon
Pinch of Mace
Salt and pepper
1 teaspoon brown sugar
1 egg, lightly beaten

Cook prunes until tender. Cool and remove pits. Mix prunes, apples, celery and rice. Add the parsley, lemon rind and juice mixing well. Add seasonings and brown sugar. Bind together with egg.

 



Fruit and Nut Stuffing

4 ounces dried apricots, soaked and chopped
4 medium tart apples, peeled, cored and chopped
4 ounces walnuts or pecans, chopped
12 slices white bread, trimmed and made into 3 cups of bread crumbs
¼ pound sweet butter, melted
Rind of 2 lemons
Salt and pepper

Combine apricots, apples, walnuts, bread crumbs, and lemon rind in a bowl. Season to taste and bind with melted butter.
