Queen's Cake Recipe

 

Similar to the Queen Victoria Sandwich Sponge, this Victorian Cake is often mentioned in the British television series 'Lark Rise to Candleford'. This recipe is especially for the President of the Lark Rise to Candleford Appreciation Society - you know who you are!


Heat oven to moderate heat 350 deg F - 375 deg F

1 cup Butter
3 cups White sugar
6 Eggs - separated
1 cup Milk
2 tsp Vanilla essence
4 cups All-Purpose Flour
2 tsp Cream of Tartar
1 level tsp Bicarbonate Soda
1 Tblsp warm Water


Beat well together first 5 ingredients in a mixing bowl. Sift together the flour and the cream of tartar and gently sprinkle onto the cake batter stirring all the time.

In a small cup put the bicarbonate soda and 1 Tblsp of warm Water, when soda is dissolved mix well into cake batter.
Beat Egg whites to a stiff foam and stir into batter gently.

Immediately pour into a well buttered cake pan or bundt and gently place in middle of oven for about 20-25mins or until a toothpick pushed in center comes out clean. Cool slightly in pan then place on cooling tray.

This is delicious just plain or served with jam/preserves of your choice and some clotted cream/ whipped cream or even with just some lemon curd.
